I focus on making costumes for Rebel Legion and 501st. They require their costumes to look and feel like they came out of the Star Wars universe. I do have a bit of a wait list right now. But since I do everything myself and by hand that I have tight quality control and if I am not happy with the way something has turned out I don't ship it out till I am.
I've heard that TwinRose Designs no longer does Jedi costumes but they still advertise them for sale. I would at least give them a shot first. I love the set they made for me.
Speedy stitches is another I've heard good things about.
I just wanted to post a clarification on behalf of Andrea at Twin Rose designs, as I just talked to her today. She is still doing Star Wars costumes (I'm actually in talks with her about starting one). She was back logged for a while and was not taking on new jobs, so it's possible that someone misconstrued that as an indication that she did not do them anymore.

ARKM: I personally use glossy magazine pages. I just rip a page out of a magazine and put it in the printer. The pages have to be the right thickness for the printer though. Too thin and they rip in the printer.
